Apricots

So I finally gave in and canned my own apricot jam. Leah has been begging for pumpkin pancakes (they just aren't the same without warm apricot jam smothered over the top) but we ran out of the jam. My mom has been supplying us for the past couple of years but since I forgot to raid the pantry for some more last time we were in H-town we've been without. Our neighbor has an apricot tree and they are all falling to the ground, so I went over and picked a bucket full. ANYWAY, I finally canned my own apricot jam for the first time. Mom you should be so proud. I remember dreading the apricot canning day when we were young. Much to my surprise it wasn't that hard.
Noah kept himself busy by playing in the sink. I think he was in there 1-2 hours, thus the wrinkly toes. He loves playing in the water and it kept him away from the stove. The last picture is of his favorite pink, yes pink, pillow that he likes to wear as a hat. Crazy kid.

So... you know what Apricot jam reminds me of? Breakfast burritos. I still remember the one time we (well April) made them and we smothered them in jam. So good. Looks like you guys had a great weekend. Love all the pics especially Noah's pink hat. JT has a pink phone that he loves. At least they are "real men" right :)

Good job! I haven't made the attempt yet. Although I think by next year I can do it. This year I was only good for about half of the canning time with my mom, due to not being able to stand for too long.
Apricot jam is definitely a staple.
